Does anyone know the recipe for fried chicken fryer presto? I know that eggs and flour, but you know not how
MARYLAND FRIED CHICKEN WITH CREAM SAUCE Active time: 50 min Start to finish: 1 hour 1 cup + 1 tablespoon flour 2 c. to tsp salt 1 / 2 teaspoon black pepper 1 (3 lb) chicken, cut into 8 serving pieces 1 / 2 cup milk 2 cups vegetable oil 1 cup water 1 1 / 2 cups half and half or cream Special equipment: a pan 12 inches deep with a lid shaped, thermometer Grease deep Put 1 cup flour with salt and pepper in a large (1 gallon) plastic bag, seal bag and shake to mix well. Turn chicken pieces in milk in a bowl, add chicken to flour mixture and seal the bag (discard the milk). Stir to coat and let stand while holding the oil is heated. Heat the oil in a skillet over medium-high heat until it registers 360 ° F on thermometer (see cooks note, below). Add chicken, skin side down and cook, covered, until browned, about 5 minutes. Turn the chicken with tongs and cook, covered, 5 minutes. Transfer chicken with tongs to a plate. Pour fat from pan into a container resistant to heat (to cool before discarding) and add water 1 / 2 cup in a saucepan. Return chicken to skillet, skin side up and cook, covered, over medium heat, stirring twice, until chicken is cooked through, about 15 minutes. From chicken to a plate and cover loosely with foil to keep warm. Remove and discard but 1 tablespoon fat from skillet, then add 1 tablespoon of flour in the leftover fat and cook medium heat, stirring, for 2 minutes. Add water 1 / 2 cup and cook, scraping the bits Brown, 2 minutes. Add half and half, beatings, and boil. Reduce heat and simmer, stirring occasionally, until sauce is thick and creamy, about 4 minutes. Note Season with salt and pepper and spoon over chicken. Ranges: To make the surface temperature of a quantity of oil with a reinforcing metallic flat deep fat thermometer, put bulb of thermometer in skillet and thermometer down, resting other end (not plastic handle) against rim of skillet. Check temperature frequently. Makes 4 servings.
